White Chocolate Icing
In looking for a recipe for my brothers wedding cake, I came across this one. I have no idea where I found it as it was year ago.
The recipe takes a little work, but it is well worth the effort. I am asked to make this icing every time I make a cake now. It is nice and creamy, holds colors very well. The picture above is of my brothers cake and I will post a picture of my nieces birthday cake this weekend as I am making one for her 1st birthday, of course using the same icing. Enjoy!!
WHITE CHOCOLATE ICING
1/4 lb White chocolate
3 tb Flour
1 c Milk
1 c Sugar
1 c Butter or margarine
1 1/2 ts Vanilla
Melt chocolate in top of double boiler. Stir flour
into chocolate. Add milk a little at a time and blend
well. Cook over medium heat, stirring constantly,
until very thick. Cool completely. In a large bowl,
beat sugar, butter and vanilla until light and fluffy.
Gradually add cooled chocolate mixture and beat until
icing is the consistency of whipped cream. This will
frost tops and sides of 2-9″ layers.
